With all my recipes, I always wing my ingredients, so, I’ll do my best with the measurements. Feel free to mix, change or add what you want to your food as you are making it.   As for measurements use your best judgement for multiple serving. (Sorry not a pro, but I’m learning).

**INGREDIENTS

1Grands flaky layer biscuits
4 Links sweet sausage
Tomato sauce
Red and green peppers
Onion (red)
Mozzarella cheese sticks or bars

How To:

1. Boil sausages for 10 minutes
2. Coat with olive oil in pan to color, then cover to simmer to cook fully for 15 to 20 minutes on medium heat.
3. Dice red and green peppers and onions
4. Dice sausages
5. Mix dice sausage and dice peppers and onion together in 1/2 cup (or amount desired) tomato sauce of your choosing in sauce pan where sausages simmered.
6. Dice and slice mozzarella cheese
7. Lay out grans flaky layers biscuits
8. Coat with sausage mix with cheese and close (close biscuit the way that best suits you) bake for 13 minutes or till it reaches a nice outer brown color.

Directions

Jamaican Stew Chicken w/ Sweet & Creamy Avocado Cole Slaw

**INGREDIENTS

STEW CHICKEN

Chicken (leg & thigh, your choice)

1 large tomato, chopped
4 stalks scallions, chopped
1 large onion, chopped
Garlic cloves, chopped
1/2 Red or Green pepper
Thyme (optional)
Pimientos grind up
Sweet Chilli sauce
Ketchup 

COLE SLAW

Raw dole bag of pre diced Cole slaw

1 Avocado

1 cup Mayo (light mayo if you want)

1/5 cup White vinegar

Diced Onion

1/2 cup Sugar (1/2 cup depending on serving amount)

 

**STEPS

COLE SLAW

1.Peel and crush avocado in a bowl.

2. In same bowl pour in pre dice Cole Slaw.

3. In separate bowl mix sauce of  1/2 cup sugar,  1 cup Mayo, 1/5 cup white vinegar, and diced onion. (Also sweeten with sugar to your liking)

4. In the bowl of cole slaw and avocado, mix an extra spoon of mayo together.

5. Then start pouring sauce gradually and mixing everything together and the product is the picture above.

I sometimes mix other things with my cole slaw, but found I really love it more with the avocado.

 

JAMAICAN STEW CHICKEN (This is my spin on the recipe)

1. Season chicken with spices or herbs of your choice, but include Pimientos grind up with seasoning.

2.Instead of frying chicken, I bake chicken to darken the chicken. Bake for 25 minutes, on 450 degrees or until darken.

3.Get a deep pot and pour 1 cup ketchup, 1 cup sweet chilli sauce, and 1 cup water and mix in pot on low heat.

4. In same pot, put in chopped and diced up, onion, red pepper, tomato,  scallions, Thyme and garlic. Cover pot and simmer for 10 minutes.

5. Once simmer, take out chicken from oven and put in pot. Also pour some of the drainage from baked chicken and pour into the pot with chicken and sauce.

6. Stir, then cover pot and stew down. Stew for 30 minutes  on low to medium or until chicken is fully cook.

I guess there are different ways people do their stew chicken, but I like it this way and do it this way all the time. The sauce amount provided is for 3 to 4 pieces of chicken.

Sweet Sausage with Penne and Spinach

INGREDIENTS

Whole wheat penne pasta

Pasta sauce (of your choice)

Grated/powder cheese, Parmesan and Romano

Diced Onion (red)

Sweet Italian Sausage

Basil

Spinach (frozen or fresh)

Olive Oil

STEPS

1.Bring a pot of water to a boil, then put in sweet Italian sausage for 10 minutes to boil.

2. Then remove from water and put in a sauce pan with a sprinkle of olive oil.

3.Then brown sausages on each side. While in pan browning, stab with fork. Then put in dice onions and sprinkle basil.

3. Once brown, then pour on pasta sauce and let simmer to cook on medium heat for 30 minutes.

4. While sausage is simmering, get another pot to bring water to a boil to put in penne and cook.

5.Once sausage is simmered in pasta sauce, dice sausages.

6.Pour off the water on the penne and mix with sausage in the sauce. Fire should be off and this depends how cook you want spinach.

7.Put spinach in pot and sprinkle powder cheese (amount is your choice) and stir everything together.

8.Cover pot and let the steam cook spinach a bit and you are done.

My Roast Pork Sandwich

INGREDIENTS

Dried tomatoes

Sweet Chilli Sauce

Pork (left over roast pork shoulder)
Red Onion
Sweet relish
Munster & Pepper jack cheese (slices)
Mayo
Wheat bread sub

1. Put left over roast pork or made fresh pork in sauce pan.
2. Dice dried tomatoes and onions to put in pot.
3. Pour on sweet chilli sauce, 3 tbsp or to your liking, then pour on 3tbsp water (use judgement)  and let simmer.
4. Prepare your bread with mayo, sweet relish and cheese.
5. Once pork is heated in sauce pan, then pour meat in between bread.
6. This is a choice, but I grill my sandwich to melt cheese. So, whether you like your cheese melted or cold, go for it.

Salad On The Side (Optional)
7.If you choose to, get spinach in a pan. Sprinkle olive oil with a bit of black pepper & a pinch of salt to serve with your grill cream cheese tuna melt sandwich.

My Grill Cream Cheese Creamy Tuna Melt Sandwich

INGREDIENTS

Dried tomatoes
Scallion
Onion
Sweet relish
Salt black pepper
Munster & Pepper jack cheese (slices)
1/2 cup Mayo
2oz Creme cheese
Wheat bread or roll
Spinach
Olive Oil
2 to 3 small Tuna cans (in water)

Feel free to mix, change or add what you want to your sandwich. I use Light Mayo, but using regular Mayo and creme cheese is good if used in moderation.  As for measurements use your best judgement for multiple serving. (Sorry not a pro, but I’m learning)

1. Cube and dice dried tomatoes, scallion, onion and sweet relish in a bowl.
2. Use a separate bowl to mix/ whip mayo and creme cheese.
3. Pour tuna in bowl with mayo and creme cheese, then add black pepper & stir.
4. Then pour in cube and dice ingredients from #1 and mix everything together.
5. Get your bread/ roll and coat tuna on one side, then slice cheeses above or of your choosing on top of tuna and close sandwich.
6. Pre heat to use a stove top grill, oven or griddle to melt your tuna, 2 to 3 minutes on each side low heat.

Salad On The Side
7.If you choose to, get spinach in a pan. Sprinkle olive oil with a bit of black pepper & a pinch of salt to serve with your grill cream cheese tuna melt sandwich.

My Fab Chicken Burrito Lunch

I went for lunch at a Mexican restaurant and got a chicken burrito, no rice. On the side, were avocado and tomatoes. This was and is as good as it looks, it was worthy of 5*****stars. The restaurant is located in Brooklyn, New York. I think I should have took and shown a picture of the burrito open, so you are able to see how this burrito looks on the inside, but sorry, it was so good that I forgot to take the after picture once I cut it open, oops.

Hummus Delight

I went out to a Diner in Brooklyn, New York for dinner and ordered the hummus delight. When it came out, I had to take a picture of the food and the art displayed on the table before me. I won’t even attempt to break down what was on the plate, as you can see, it looks complicated in a good way. This was worthy of 4****stars.
