With all my recipes, I always wing my ingredients, so, I’ll do my best with the measurements. Feel free to mix, change or add what you want to your food as you are making it. As for measurements use your best judgement for multiple serving. (Sorry not a pro, but I’m learning).
**INGREDIENTS
STEW CHICKEN
Chicken (leg & thigh, your choice)
1 large tomato, chopped
4 stalks scallions, chopped
1 large onion, chopped
Garlic cloves, chopped
1/2 Red or Green pepper
Thyme (optional)
Pimientos grind up
Sweet Chilli sauce
Ketchup
COLE SLAW
Raw dole bag of pre diced Cole slaw
1 Avocado
1 cup Mayo (light mayo if you want)
1/5 cup White vinegar
Diced Onion
1/2 cup Sugar (1/2 cup depending on serving amount)
**STEPS
COLE SLAW
1.Peel and crush avocado in a bowl.
2. In same bowl pour in pre dice Cole Slaw.
3. In separate bowl mix sauce of 1/2 cup sugar, 1 cup Mayo, 1/5 cup white vinegar, and diced onion. (Also sweeten with sugar to your liking)
4. In the bowl of cole slaw and avocado, mix an extra spoon of mayo together.
5. Then start pouring sauce gradually and mixing everything together and the product is the picture above.
I sometimes mix other things with my cole slaw, but found I really love it more with the avocado.
JAMAICAN STEW CHICKEN (This is my spin on the recipe)
1. Season chicken with spices or herbs of your choice, but include Pimientos grind up with seasoning.
2.Instead of frying chicken, I bake chicken to darken the chicken. Bake for 25 minutes, on 450 degrees or until darken.
3.Get a deep pot and pour 1 cup ketchup, 1 cup sweet chilli sauce, and 1 cup water and mix in pot on low heat.
4. In same pot, put in chopped and diced up, onion, red pepper, tomato, scallions, Thyme and garlic. Cover pot and simmer for 10 minutes.
5. Once simmer, take out chicken from oven and put in pot. Also pour some of the drainage from baked chicken and pour into the pot with chicken and sauce.
6. Stir, then cover pot and stew down. Stew for 30 minutes on low to medium or until chicken is fully cook.
I guess there are different ways people do their stew chicken, but I like it this way and do it this way all the time. The sauce amount provided is for 3 to 4 pieces of chicken.
